Chorizo and Eggs With Nopal Cactus

Ingredients:
1 lb Pork or Beef or Soy Chorizo
5 Eggs
2 Tbsp of Olive Oil
1/2 of a Yellow Onion
1 Nopal Cactus Paddle
2 tablespoons of Minced Garlic
Step 1: Let's Get Started:
Remove the spines from the cactus paddle with a small paring knife in an up and down motion on each spine node
Wash the cactus paddle well removing dirt and ALL OF THE SPINES
Dice the nopal into small cubes and set aside
Dice the onion and garlic. You can also use minced or diced garlic in the jar. Set aside


Step 5: Lets Get Cooking
5. Put the olive oil the onion and garlic in a cast iron skillet. You can use a regular skillet as well

6. Sautee the onion and garlic until fragrant

7. Add the nopal cactus

8. Sautee all together until the nopal softens. You may notice the nopal has a sticky and slimy look to it. This is normal. More on that later. When it is done remove from the pan and set aside

Step 8: Time to Cook the Chorizo and Eggs
8: Add the Chorizo to the pan and cook about 5 minutes

9: Add the eggs to the chorizo

10: Cook until the eggs are set

11. Add the cooked nopal, onion and garlic to the chorizo and eggs. The slimy and stickiness of the nopal will get absorbed by the eggs
